    Make the Sun-Dried Tomato Pesto

    In a food processor, combine sun-dried tomatoes, fresh basil leaves, pine nuts, Parmesan cheese, olive oil, minced garlic, red pepper flakes, and salt. Blend until smooth. Adjust seasoning to taste and set aside.

Mushroom Filling Preparation

    Sauté the Mushrooms

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add sliced mushrooms and minced garlic. Sauté until mushrooms are browned and tender, about 5-7 minutes. Season with salt and black pepper to taste. Remove from heat and set aside.

Sole Assembly

    Prepare the Sole Fillets

    Preheat the oven to 375°F (190°C). In a mixing bowl, combine the ricotta cheese, sautéed mushrooms, salt, and pepper. Lay the sole fillets on a parchment-lined baking sheet. Spoon the ricotta mixture evenly onto each fillet.

    Add the Pesto and Cheese

    Spread a generous layer of the sun-dried tomato pesto over the ricotta mixture. Top each fillet with shredded mozzarella cheese. Drizzle with olive oil and squeeze fresh lemon juice over the top.

    Bake in the preheated oven for 15-20 minutes, or until the fish is cooked through and the cheese is bubbly and slightly golden.
