Preparation of Chicken

Cook the Chicken
Preheat the oven to 375°F (190°C). Season the chicken breasts with salt and black pepper on both sides. Place them in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through and no longer pink in the center. Remove from the oven and let it rest for 5-10 minutes.

Make the Pesto
In a food processor, combine the fresh basil leaves, pine nuts, garlic cloves, and grated Parmesan cheese. Pulse until finely chopped. With the processor running, slowly add the olive oil and blend until smooth. Season with salt and black pepper to taste.

Assemble the Dish
Slice the cooked chicken breasts and place them on a serving platter. Generously spoon the prepared pesto sauce over the chicken. Top with chopped sun-dried tomatoes, crumbled goat cheese, and shredded mozzarella cheese.

Drizzle balsamic reduction over the assembled dish for added flavor and garnish.
