Cook the Penne Pasta
Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions, usually about 10-12 minutes, until al dente. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Incorporate Tomatoes and Spinach
Stir in the diced fresh tomatoes and cook for about 2 minutes until they start to soften. Then, add the fresh spinach and cook until wilted, about 2 minutes.

Make the Cream Sauce
Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese, and season with salt and black pepper to taste. Stir until the cheese is melted and the sauce is creamy.

Add the cooked penne pasta to the skillet and toss gently to combine, ensuring the pasta is well coated with the creamy sauce and mixed with the shrimp and vegetables.
