Prepare the Lemons
Wash and dry the lemons thoroughly. Using a vegetable peeler or a sharp knife, carefully peel the lemons, making sure to avoid the white pith as much as possible. The goal is to extract the flavorful zest.

Let the mixture sit in a cool, dark place for about 1-2 weeks. Shake the container gently every few days to help mix the flavors.
Simple Syrup

Prepare the Simple Syrup
In a saucepan, combine the granulated sugar and water. Heat over medium heat, stirring until the sugar has completely dissolved. Once dissolved, remove from heat and allow to cool completely.

Combine and Strain
After the infusion period, strain the vodka mixture through a fine mesh strainer or cheesecloth into a clean bottle, discarding the lemon peels.

Mix with Simple Syrup
Add the cooled simple syrup to the strained lemon-infused vodka. Stir well to combine.

Bottle and Chill
Pour the limoncello into clean bottles, seal tightly, and refrigerate. It is best served chilled.
