Make the Ricotta Spread
In a medium bowl, combine ricotta cheese, salt, black pepper, and olive oil. Mix well until smooth and creamy. Set aside.

Sauté the Spinach
In a large skillet over medium heat, add olive oil and minced garlic. Sauté for about 1 minute until fragrant. Add fresh spinach, salt, and black pepper. Cook until the spinach is wilted, about 3-4 minutes. Remove from heat and set aside.

Prepare the Bruschetta Topping
In a small bowl, mix diced tomatoes, fresh basil, balsamic vinegar, olive oil, salt, and black pepper. Stir until well combined and set aside to allow flavors to meld, about 10 minutes.

Assemble the Giardino
Spread a generous layer of the ricotta mixture on a serving platter or individual plates. Top with sautéed spinach, followed by the bruschetta topping. Finally, sprinkle crumbled goat cheese, thinly sliced red onion, and crushed pistachios over the top. Serve immediately.
