Preheat the oven
Preheat your oven to 350°F (175°C) and grease an 8-inch round cake pan with butter or line it with parchment paper.

Melt chocolate and butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Set the bowl over a pot of simmering water (double boiler method) and stir until completely melted and smooth. Remove from heat and let it cool slightly.

Combine sugar and eggs
In a separate mixing bowl, whisk together the granulated sugar and large eggs until well combined and slightly frothy.

Mix in chocolate
Pour the melted chocolate mixture into the egg mixture, add the vanilla extract and a pinch of salt. Stir until well combined.

Bake the cake
Pour the batter into the prepared cake pan and bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Chocolate Mousse

Melt chocolate
In a heatproof bowl, melt the dark chocolate (100 g) using the double boiler method, stirring until smooth. Let it cool slightly.

Whip cream
In a mixing bowl, whip the heavy cream until soft peaks form. Gradually add powdered sugar and vanilla extract, and continue to whip until stiff peaks form.

Combine ingredients
Gently fold the melted chocolate into the whipped cream until well combined. Then, fold in the beaten egg whites carefully to maintain the airy texture.

Chill the mousse
Spoon the mousse over the cooled flourless chocolate cake and refrigerate for at least 2 hours to set before serving.
