Chicken Cutlet

Prepare the Chicken
Begin by placing chicken breasts between two pieces of plastic wrap and pounding them to an even thickness, about 1/2 inch.

Bread the Chicken
Set up a breading station with three shallow dishes: one with flour mixed with salt and pepper, one with beaten eggs, and one with bread crumbs. Dredge each chicken cutlet first in flour, then dip into the egg, and finally coat with bread crumbs.

Make the Goat Cheese Spread
In a bowl, combine goat cheese, cream cheese, honey, and fresh thyme. Mix well until smooth and creamy.

Make the Balsamic Reduction
In a small saucepan, combine balsamic vinegar and honey. Bring to a simmer over medium heat, then reduce to low and let cook for about 15-20 minutes, or until thickened. Remove from heat and let cool.

Assemble the Dish
On a serving plate, place a chicken cutlet. Spread a generous amount of the goat cheese spread on top, followed by the crispy bacon. Spoon the bruschetta topping over the bacon and drizzle with the balsamic reduction.
