Slice the capicollo, salami, and pepperoni into thin rounds. If you are using pre-cooked house made sausage, crumble it into small pieces.

In a small saucepan, heat the tomato sauce over medium heat until warm. Stir occasionally to prevent sticking.

Assemble the Capone
On a clean surface or a pizza stone, layer the meats evenly. Start with the house made sausage, followed by the capicollo, salami, and pepperoni. Pour the warm tomato sauce over the top, ensuring an even distribution.

Sprinkle the mozzarella cheese evenly over the meat and sauce layer.
Baking

Bake the Capone
Preheat your oven to 220°C (425°F). Place the assembled Capone in the oven and bake for 15-20 minutes, or until the cheese is melted and bubbly and the edges are crispy.
Finishing Touches

Garnish and Serve
Once done, remove the Capone from the oven. If desired, sprinkle fresh basil, oregano, and crushed red pepper over the top. Allow to cool for a few minutes before slicing and serving.
