Clean the Calamari
Rinse the fresh calamari under cold water. Remove the head and tentacles, then slice the body into rings about 1/2 inch thick. Pat dry with paper towels.

Marinate in Buttermilk
Place the calamari rings and tentacles into a bowl and cover them with buttermilk. Allow to marinate for at least 30 minutes in the refrigerator.

Prepare the Breading
In a large bowl, combine the all-purpose flour, cornmeal, salt, black pepper, paprika, garlic powder, and cayenne pepper. Mix thoroughly to ensure even distribution of spices.

Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C). You can test the oil by dropping a small amount of the breading mixture into it; if it sizzles, the oil is ready.

Bread the Calamari
Remove the calamari from the buttermilk, letting excess drip off. Dredge the rings and tentacles in the flour mixture, ensuring they are evenly coated.

Fry the Calamari
Once the oil is hot, carefully add the breaded calamari in batches, ensuring not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy.

Drain and Serve
Using a slotted spoon, remove the calamari from the oil and drain on paper towels. Serve hot with your favorite dipping sauce.
