Method

Cooking the Pasta

  1. 1

    Boil the Pasta

In a large pot of salted boiling water, cook the linguine pasta according to package instructions until al dente. Drain and set aside, reserving some pasta water.

Preparing the Sauce

  1. 2

    Sauté the Aromatics

In a large skillet over medium heat, melt the butter. Add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

  2. 3

    Add the Shrimp

Add the shrimp to the skillet and cook until they turn pink, about 3-4 minutes. Stir in the Calabrian chili paste and mix well.

  3. 4

    Deglaze with Wine

Pour in the white wine and bring to a simmer. Cook for about 3-5 minutes until the wine reduces slightly.

  4. 5

    Make it Creamy

Stir in the heavy cream and allow it to simmer for another 2-3 minutes. Season with salt and black pepper to taste.

Combining

  1. 6

    Mix Pasta and Sauce

Add the drained linguine to the skillet with the shrimp and sauce. Toss to combine, adding reserved pasta water as needed to achieve desired consistency.

  2. 7

    Finish and Serve

Stir in the grated Parmesan cheese and fresh parsley. Mix well and serve immediately, garnished with extra Parmesan if desired.
