Crostini Preparation

Slice the Baguette
Preheat your oven to 400°F (200°C). Slice the baguette into 1/2 inch thick slices.

Brush with Olive Oil
Lay the slices on a baking sheet and brush both sides lightly with olive oil.

Toast the Crostini
Toast in the preheated oven for about 8-10 minutes, or until golden brown. Remove from oven and let cool.
Bruschetta Topping Preparation

Prepare the Tomatoes
Chop the vine ripe tomatoes into small pieces and place them in a medium bowl.

Add Fresh Basil
Chop the fresh basil leaves and add them to the tomatoes.

Season the Mixture
Add salt and black pepper to the tomato and basil mixture, stirring gently to combine.

Prepare the Balsamic Reduction
In a small saucepan, bring the balsamic vinegar to a simmer over medium heat. Reduce the heat to low and let it simmer until it thickens and reduces to about half its volume, approximately 10-15 minutes.

Add Goat Cheese
Crumble the goat cheese over the tomato mixture and gently fold it in, being careful not to mash the tomatoes.
Assembly

Top the Crostini
Spoon the tomato and goat cheese mixture generously over each toasted crostini.

Drizzle with Balsamic Reduction
Drizzle the balsamic reduction over the topped crostini.

Finish with Parmesan
Sprinkle aged parmesan cheese on top of each bruschetta before serving.
