Prepare the Rice

Cook the Arborio Rice
In a medium saucepan, bring the chicken or vegetable broth to a boil. Add the Arborio rice, reduce heat to low, cover, and simmer for about 18-20 minutes until the rice is creamy and tender. Remove from heat and let it cool slightly.

Mix in Cheese and Egg
Once the rice has cooled, stir in the Parmesan cheese and the beaten egg until well combined. Set aside.
Prepare the Filling

Cook the Meat and Vegetables
In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sauté until the onion is translucent. Add the ground meat, salt, and black pepper. Cook until browned.

Add Carrots and Peas
Stir in the diced carrots and cook for about 3-4 minutes. Add the frozen peas and tomato sauce, stirring to combine. Let it simmer for about 5 minutes until heated through. Remove from heat and let cool.

Mix in Mozzarella
Once the filling has cooled, stir in the diced mozzarella cheese.
Form and Fry the Arancini

Shape the Rice Balls
Take a small handful of the rice mixture (about the size of a golf ball) and flatten it in your palm. Place a spoonful of the meat filling in the center, then mold the rice around it to form a ball. Repeat with the remaining mixture.

Fry the Arancini
In a deep pan, heat vegetable oil over medium-high heat. Carefully add the breaded arancini in batches and fry until golden brown on all sides, about 3-4 minutes. Remove and drain on paper towels.
