    Prepare the Turkey Leg

    Preheat your oven to 300°F (150°C). Season the turkey leg with salt, black pepper, minced garlic, and thyme. Place it in a roasting pan and cover it with foil. Roast for about 3-4 hours, or until the meat is tender and easily pulls away from the bone.

    Shred the Meat

    Once cooked, remove the turkey leg from the oven and let it cool slightly. Carefully remove the skin and bone, and shred the meat into bite-sized pieces.

    Make the Pan Gravy

    In a skillet, melt the butter over medium heat. Add the diced onion and sauté until translucent. Stir in the flour and cook for about 1-2 minutes until lightly browned. Gradually whisk in the chicken stock, cooking until the gravy thickens. Season with salt and pepper to taste.

    Assemble the Roulade

    Lay out the shredded turkey meat on a clean surface. Roll it tightly into a cylindrical shape. Secure with kitchen twine if necessary.

    Slice the turkey roulade and serve warm, drizzled with the pan gravy, and garnish with chopped parsley.
