Prepare the Brioche Crust
Preheat the oven to 375°F (190°C). Tear the brioche into small pieces and pulse in a food processor until coarse crumbs form. In a skillet, melt 2 tablespoons of butter over medium heat. Add the brioche crumbs and toast until golden brown, about 5 minutes. Remove from heat and stir in chopped parsley, lemon zest, salt, and pepper.

Prepare the Halibut
Season the halibut fillets with salt and pepper. Place them on a baking sheet lined with parchment paper. Spread the toasted brioche mixture evenly over the top of each fillet, pressing gently to adhere.

Bake the Halibut
Bake the halibut in the preheated oven for 15-20 minutes, or until the fish is cooked through and the crust is golden brown.
