    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips to create fries. Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

    Fry the Potatoes

    Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Drain the soaked fries and pat them dry with paper towels. Fry the potatoes in batches until they are golden brown and crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels.

    Season and Serve

    While the fries are still hot, sprinkle them with salt, grated Parmesan cheese, and finely chopped fresh herbs (parsley and chives). Grate the black truffle over the top for added flavor. Serve immediately with truffle aioli on the side.
