Pancake Preparation

    In a bowl, mix the sourdough starter, flour, milk, egg, baking powder, sugar, and salt until just combined. Fold in the melted butter.

    Heat a non-stick skillet over medium heat. Pour 1/4 cup of batter for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on both sides.

Huckleberry Compote Preparation

    In a saucepan, combine huckleberries, sugar, water, and lemon juice. Cook over medium heat until the mixture thickens, about 10-15 minutes. Remove from heat and let cool.

Mascarpone Cream Preparation

    In a bowl, whisk together mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until soft peaks form.

Assembly

    Stack the Pancakes

    On a plate, stack 2-3 pancakes, top with huckleberry compote, and finish with a dollop of mascarpone cream.
