Preparation of Seafood

Prepare the Shrimp
Bring a large pot of water to a boil. Add the jumbo shrimp and cook for 2-3 minutes until pink and opaque. Remove and plunge into ice water to stop cooking. Peel and devein.

Prepare the Oysters
Shuck the oysters carefully, ensuring to keep the oyster liquor intact. Place on a platter with ice.
Bloody Mary Cocktail Sauce

Mix the Sauce
In a bowl, combine ketchup, horseradish, Worcestershire sauce, lemon juice, hot sauce, and salt. Adjust seasoning to taste.
Watermelon Granita

Make the Granita
Blend watermelon until smooth. Strain into a bowl, mix in lime juice and sugar. Pour mixture into a shallow dish and freeze for 2-3 hours, scraping with a fork every 30 minutes until fluffy.
Mignonette

Prepare the Mignonette
In a small bowl, combine red wine vinegar, shallots, and crushed peppercorns. Let sit for at least 30 minutes to meld flavors.

Assemble the Seafood Tower
On a large platter, arrange the shrimp, oysters, and serve with Bloody Mary cocktail sauce, watermelon granita, and mignonette on the side.
