    Prepare the Berries

    In a medium bowl, combine mixed berries, granulated sugar, and lemon juice. Toss gently and let sit for at least 30 minutes to allow the berries to macerate.

Buttermilk Biscuits

    Make the Biscuits

    Preheat the oven to 425°F (220°C). In a large bowl, whisk together flour, baking powder, baking soda, and salt. Cut in cold butter until the mixture resembles coarse crumbs. Stir in buttermilk until just combined. Turn the dough onto a floured surface, knead gently, and roll out to 1-inch thickness. Cut into rounds and place on a baking sheet. Bake for 15-20 minutes until golden.

Goat Feta Ice Cream

    Prepare the Ice Cream

    In a blender, combine goat cheese, heavy cream, milk, granulated sugar, and vanilla extract. Blend until smooth. Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency. Transfer to a container and freeze until firm.

Assembly

    Assemble the Shortcake

    To serve, split the buttermilk biscuits in half. Layer macerated berries and a scoop of goat feta ice cream between the biscuit halves. Top with chopped Marcona almonds and a sprinkle of powdered sugar mixed with vanilla extract.
