In a small pot, heat the black beans over medium heat until warmed through. Season with salt and pepper to taste.

In a non-stick skillet, heat a little oil over medium-low heat. Crack the eggs into the skillet and cook until the whites are set and the yolks are still runny, about 3-4 minutes.

Assemble the Huevos Rancheros
On each tortilla, layer a spoonful of black beans, followed by a sunny-side-up egg. Top with diced avocado, chopped red onion, crumbled cotija cheese, and drizzle with salsa roja and salsa verde.
