Preparation and Cooking

    Preparing the Prime Rib

    Preheat your oven to 450°F (232°C). Rub the prime rib roast with olive oil, ensuring it is evenly coated.

    Creating the Herb Mixture

    In a bowl, mix together the chopped rosemary, thyme, minced garlic, salt, and black pepper. Rub this mixture all over the prime rib.

    Roasting the Prime Rib

    Place the prime rib in a roasting pan, bone side down. Roast in the preheated oven for 20 minutes, then reduce the temperature to 325°F (163°C) and continue to roast for about 1.5 to 2 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare.

    Resting the Meat

    Once cooked, remove the prime rib from the oven and cover it loosely with foil. Let it rest for at least 20 minutes before slicing.

    Making the Au Jus

    While the meat is resting, place the roasting pan over medium heat on the stove. Add beef broth and scrape up the browned bits from the bottom of the pan. Simmer for a few minutes, then strain the sauce into a serving bowl.

    Preparing Horseradish Crème

    In a small bowl, mix together the horseradish and sour cream until well combined. Adjust seasoning to taste.
