Grilled New Zealand King Salmon and Three Grain Salad

Preparation Steps

    Cook the Grains

    In a large pot, combine quinoa, farro, and barley with 4 cups of water and a pinch of salt. Bring to a boil, then reduce heat and simmer until all grains are tender, about 20-25 minutes. Drain any excess water and let cool.

    Prepare the Sauce

    In a blender, combine coconut milk, diced plums, minced black garlic, and a pinch of salt and pepper. Blend until smooth and creamy. Adjust seasoning to taste.

    Grill the Salmon

    Preheat the grill to medium-high heat. Brush the salmon fillets with olive oil, lemon juice, salt, and pepper. Grill the salmon for about 4-5 minutes on each side, or until cooked through and flaky.
