Preparation
Preheat your oven to 350°F (175°C).

Season the Prime Rib
In a small bowl, mix the minced garlic, chopped rosemary, black pepper, salt, and olive oil to create a paste. Rub this mixture all over the prime rib, ensuring it is evenly coated.

Roasting
Place the seasoned prime rib on a roasting rack in a roasting pan. Roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare, or to your desired doneness.

Once cooked, remove the prime rib from the oven and let it rest for 20 minutes before slicing. This allows the juices to redistribute.

Slice the prime rib and serve with a drizzle of demi-glace on the side.
