Marinate the Chicken
In a large bowl, combine the buttermilk, cajun seasoning, salt, and black pepper. Add the chicken pieces, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight.

Prepare the Coating
In a separate bowl, mix the flour and remaining cajun seasoning. Remove chicken from the buttermilk and let excess drip off. Dredge each piece in the flour mixture, pressing to adhere.

Fry the Chicken
In a large skillet or deep fryer, heat the vegetable oil to 350°F (175°C). Carefully add the coated chicken pieces in batches, frying until golden brown and cooked through, about 12-15 minutes per batch. Use a meat thermometer to ensure internal temperature reaches 165°F (74°C).
