    Prepare the Brussels Sprouts

    Trim the ends of the Brussels sprouts and cut them in half. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the Brussels sprouts and sauté for about 5-7 minutes until they start to brown. Season with salt and pepper, then set aside.

    Cook the Filets

    Season the beef filets with salt and pepper. In a separate skillet, heat the remaining tablespoon of olive oil and butter over high heat. Once hot, add the filets and sear for 3-4 minutes on each side for medium-rare. Remove from skillet and let rest.

    Prepare the Gratin

    In the same skillet used for the filets, add the diced onion and minced garlic. Sauté until soft. Stir in the heavy cream and bring to a simmer. Add the Shopshire cheese and stir until melted and smooth. Pour the mixture into a baking dish.

    Assemble and Bake

    Place the sautéed Brussels sprouts on top of the cheese mixture. Bake in a preheated oven at 180°C (350°F) for 15-20 minutes until bubbly and golden on top.

    Slice the filets and serve alongside the Shopshire gratin and caramelized Brussels sprouts.
