    Prepare the Vegetables

    Wash and cut the asparagus into 1-inch pieces. Clean and slice the wild mushrooms. Dice the tomato.

    Cook the Filling

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add asparagus and wild mushrooms, sautéing for about 5 minutes until tender. Add the diced tomato, salt, and pepper. Cook for another 2 minutes, then remove from heat.

    Whisk the Eggs

    In a bowl, whisk the eggs until well combined. Season with a pinch of salt and pepper.

    Cook the Omelet

    In the same skillet, add another tablespoon of olive oil and heat over medium-low. Pour in the whisked eggs, tilting the pan to spread evenly. Cook for about 3-4 minutes until the edges begin to set.

    Add Filling and Cheese

    Once the omelet is set on the bottom but slightly runny on top, add the sautéed vegetable mixture and Swiss cheese on one half of the omelet.

    Fold and Serve

    Gently fold the omelet in half over the filling. Cook for another minute until the cheese melts. Slide onto a plate and serve warm.
