Sugar Cane Glazed Heirloom Carrots

    Prepare the Potatoes

    Preheat the oven to 400°F (200°C). Peel and slice the Yukon Gold potatoes thinly.

    Layer and Bake

    In a buttered casserole dish, layer the potato slices, interspersing with melted butter, salt, and thyme. Bake for about 45 minutes until golden and tender.

Sugar Cane Glazed Heirloom Carrots

    Prepare the Carrots

    Peel the heirloom carrots and cut them into uniform sticks.

    Glaze the Carrots

    In a pan, melt the butter and mix in the brown sugar and sugar cane syrup. Add the carrots, salt, and pepper. Cook until the carrots are tender and glazed, about 15-20 minutes.

Corn Salsa

    Combine Ingredients

    In a bowl, mix together the corn kernels, diced red onion, chopped cilantro, lime juice, salt, and minced jalapeño. Adjust seasoning to taste.

Smoked Corn Bread

    In a bowl, combine cornmeal, flour, baking powder, and salt.

    In another bowl, whisk together milk, eggs, melted butter, and smoked paprika.

    Combine wet and dry ingredients, pour into a greased baking dish, and bake at 375°F (190°C) for 25-30 minutes until golden.

Whipped Golden Yukon

    Boil and Mash Potatoes

    Boil the Golden Yukon potatoes in salted water until tender. Drain and mash with heavy cream, butter, salt, and pepper until fluffy.
