Prepare the Gelatin
In a small bowl, sprinkle the gelatin powder over 3 tablespoons of cold water and let it bloom for about 5 minutes.

Heat the Cream Mixture
In a saucepan, combine the coconut milk, heavy cream, granulated sugar, and a pinch of salt. Heat over medium heat until the mixture is hot but not boiling, stirring frequently.

Incorporate the Gelatin
Remove the saucepan from heat and stir in the bloomed gelatin until completely dissolved. Add the vanilla extract and mix well.

Chill the Panna Cotta
Pour the mixture into serving cups or molds and refrigerate for at least 4 hours or until set.

Serve
Once set, carefully remove the panna cotta from molds if using. Top with toasted coconut flakes and fresh mango or berries before serving.
