Lamb Slider

Preparation

    Prepare the Lamb Slider

    In a bowl, combine ground lamb, chopped Peppadew peppers, salt, and black pepper. Form into 3 patties. Grill or pan-fry over medium heat for about 4-5 minutes per side, or until cooked through.

    Prepare the Venison Slider

    In another bowl, mix ground venison, cinnamon, salt, and black pepper. Shape into 3 patties. Cook similarly to the lamb sliders for about 4-5 minutes per side.

    Prepare Duck Slider

    Season sliced duck breast with salt and pepper. Sear in a hot skillet for about 3-4 minutes on each side. Assemble with sour cherry spread.

Assembly

    Assemble the Sliders

    On each brioche bun, place the cooked lamb, venison, and duck patties respectively. Top the lamb with Peppadew compote, the venison with caramelized shallots, apple slices, and Vermont cheddar, and the duck with seared foie gras. Serve with pickles on the side.
