1. Prepare the Potatoes

Peel and cut the potatoes into thin strips. Rinse them in cold water and pat dry with a paper towel.

2. Fry the Potatoes

In a large pot, heat the vegetable oil over medium-high heat. Once hot, add the potato strips in batches and fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels, then season with salt.

3. Cook the Salmon

While the fries are cooking, heat olive oil in a skillet over medium heat. Season the salmon fillets with salt, black pepper, and garlic powder. Place the fillets skin-side down in the skillet and cook for about 4-5 minutes. Flip the fillets and cook for an additional 3-4 minutes until cooked through.

4. Serve

Remove the salmon from the skillet and let it rest for a minute. Serve with the fries and wedges of fresh lemon.
