Marinated Grilled Steak

Prepare the Marinade
In a bowl, mix soy sauce, olive oil, minced garlic, black pepper, and fresh thyme. Place the steaks in a resealable bag and pour the marinade over them. Seal and marinate in the refrigerator for at least 1 hour, preferably overnight.

Port Wine Demi-Glace

Make the Demi-Glace
In a saucepan over medium heat, melt the butter and sauté the shallots until translucent. Add the port wine and beef stock, and bring to a boil. Reduce the heat and let simmer until the sauce thickens, about 15-20 minutes. Stir in fresh thyme and season with salt and pepper to taste.
Horseradish Sauce

Mix the Sauce
In a small bowl, combine prepared horseradish, sour cream, lemon juice, and salt. Mix well and refrigerate until ready to serve.
French Fries

Prepare the Fries
Peel and cut the russet potatoes into strips. Soak them in cold water for at least 30 minutes, then drain and pat dry. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Drain on paper towels and season with salt to taste.
