Preparation

    Caramelize the Onions

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and cook for about 10-15 minutes, stirring frequently, until the onions are soft and golden brown. Season with salt and pepper to taste.

    Prepare the Ribeye

    In the same skillet, add the shaved ribeye to the cooked onions. Cook for about 5-7 minutes until the meat is browned and cooked through. Add in roasted red peppers and mix well. Adjust seasoning with salt and pepper if needed.

    Prepare the Hoagie Rolls

    While the ribeye is cooking, slice the French hoagie rolls and toast them lightly in the oven or on a skillet.

    Make the Cheese Sauce

    In a small saucepan, melt the American cheese over low heat until smooth, stirring continuously.

Assembly

    Assemble the Sandwich

    Spread a layer of the cheese sauce on the bottom half of each toasted hoagie roll. Pile the ribeye mixture high on top, then pour more cheese sauce over the meat. Top with mixed greens and close the sandwich with the other half of the roll.
