Soup Preparation

    Caramelize the Onions

    In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 30-40 minutes.

    Add Garlic and Broths

    Once the onions are caramelized, add the minced garlic and cook for an additional minute. Pour in the beef and duck broth, and add thyme, bay leaf, salt, and black pepper.

    Simmer the Soup

    Bring the mixture to a gentle boil, then reduce the heat to low and let it simmer for 20 minutes. Remove bay leaf before serving.

    Prepare the Cheese Topping

    In a bowl, mix together a blend of cheeses such as Gruyère, Emmental, and Parmesan (about 2 cups total).

    Ladle the soup into oven-safe bowls, top each with a generous amount of the cheese blend, and place under the broiler until the cheese is bubbly and golden, about 3-5 minutes.
