Prepare the Marinade
In a mixing bowl, combine the extra virgin olive oil, chopped rosemary, chopped thyme, smashed garlic cloves, orange peel, red pepper flakes, salt, and black pepper. Mix well to combine the flavors.

Add the Olives
Add the Kalamata, green, and Castelvetrano olives to the marinade. Stir gently to coat all the olives with the marinade mixture.

Marinate the Olives
Cover the bowl with plastic wrap or transfer the mixture to a glass jar with a tight-fitting lid. Allow the olives to marinate in the refrigerator for at least 2 hours, preferably overnight, to enhance the flavors.

Once marinated, serve the olives as an appetizer or as part of a charcuterie board. Enjoy!
