    Make the Crust

    Preheat the oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan.

    In a large bowl, beat the softened cream cheese until smooth. Gradually add sugar and mix until well combined. Add sour cream, vanilla extract, and mix until smooth. Add eggs one at a time, mixing just until combined.

    Pour the filling over the crust in the springform pan. Bake for 50-60 minutes or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour.

    Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours, preferably overnight.
