Beef Bourguignon

Garlic Mashed Potatoes

Method

Beef Bourguignon

  1. 1

    Prepare the Ingredients

Preheat the oven to 325°F (160°C). In a large Dutch oven, cook the bacon over medium heat until crispy. Remove and set aside.

  2. 2

    Brown the Beef

In the bacon fat, brown the beef cubes on all sides. Remove and set aside.

  3. 3

    Sauté Vegetables

In the same pot, add pearl onions, carrots, celery, and mushrooms. Sauté until golden brown.

  4. 4

    Combine Ingredients

Return the beef and bacon to the pot. Add garlic, red wine, beef broth, bay leaves, thyme, salt, and black pepper.

  5. 5

    Braise

Bring to a simmer, cover, and transfer to the oven. Cook for about 2.5 to 3 hours, or until the beef is tender.

Garlic Mashed Potatoes

  1. 6

    Cook the Potatoes

In a large pot, boil potatoes until fork-tender, about 15-20 minutes. Drain and return to pot.

  2. 7

    Mash the Potatoes

Add butter, milk, minced garlic, salt, and pepper to potatoes and mash until creamy.

Haricots Verts

  1. 8

    Prepare the Beans

Blanch haricots verts in boiling salted water for 2-3 minutes. Drain and transfer to ice water.

  2. 9

    Sauté

In a skillet, heat olive oil over medium heat and sauté the green beans for 5 minutes. Season with salt and pepper.
