Prepare and combine

Chill an old-fashioned glass by filling it with ice and setting aside. In a cocktail shaker, add 2 oz amaretto, 1 oz fresh lemon juice, 0.5 oz simple syrup, and 1 egg white if using.

Dry shake (if using egg white)

If you've added the egg white, secure the shaker and shake vigorously without ice for 10–15 seconds to emulsify and build foam.

Wet shake

Add ice to the shaker (enough to fill) and shake again vigorously for 10–15 seconds until well chilled and slightly frothy.

Discard the ice from the chilled old-fashioned glass. Strain the cocktail over a large ice cube (or fresh ice) into the glass. If you skipped the egg white, you can double-strain to remove small ice chips.

Finish

Add 2 dashes angostura bitters on top of the foam (if egg white used) or onto the surface of the drink and, using a toothpick or small skewer, swirl the bitters into a simple pattern if desired.

Garnish & Serve

Garnish with a maraschino or brandied cherry and a lemon wheel or twist placed on the rim or floated on top. Serve immediately.
