Preheat the Oven
Preheat your oven to 375°F (190°C).

Make the Cream Mixture
In a mixing bowl, combine heavy cream, truffle oil, minced garlic, salt, and black pepper. Mix well.

Layer the Gratin
In a greased baking dish, arrange a layer of potato slices, followed by a layer of carrot slices. Pour a portion of the cream mixture over the layer, and sprinkle some Gruyère and Parmesan cheese. Repeat the layering until all ingredients are used, finishing with a layer of cheese on top.

Bake
Cover the baking dish with aluminum foil and bake for 40 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and bubbly.

Cool and Serve
Let the gratin cool for at least 10 minutes before serving. This will help it set and make slicing easier.
