Foie Gras Profiterole Ingredients
Method
Foie Gras Profiterole Directions
- 1
Prepare the Choux Pastry
In a medium saucepan, combine water and unsalted butter. Heat over medium until the butter melts completely.
- 2
Make the Dough
Add all-purpose flour and salt to the saucepan. Stir rapidly with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan. Remove from heat.
- 3
Incorporate the Eggs
Allow the dough to cool slightly, then add the eggs one at a time, mixing well after each addition until smooth and glossy.
- 4
Pipe the Profiteroles
Preheat the oven to 400°F (200°C). Transfer the dough to a piping bag and pipe small rounds (about 1 inch in diameter) onto a baking sheet lined with parchment paper.
- 5
Bake the Choux
Bake in the preheated oven for 20-25 minutes until golden brown. Remove and let cool.
- 6
Prepare the Foie Gras Filling
In a mixing bowl, combine foie gras, heavy cream, black pepper, and chopped chives. Mix until smooth and creamy.
- 7
Fill the Profiteroles
Once the profiteroles have cooled, cut a small slit in the side and fill each with the foie gras mixture using a piping bag.
- 8
Finish with Truffle Oil
Drizzle truffle oil over the filled profiteroles before serving.
