Prepare the Duck
Score the skin of the duck breasts in a crosshatch pattern, being careful not to cut into the meat. Season both sides with salt and black pepper.

Cook the Duck
Place the duck breasts skin-side down in a cold skillet. Turn the heat to medium and cook for about 8-10 minutes until the fat renders and the skin is crispy. Flip and cook for an additional 4-5 minutes for medium-rare. Remove from heat and let rest.

Make the Orange Sauce
In the same skillet, pour out excess fat, leaving a tablespoon. Add orange juice, honey, and orange zest. Simmer until slightly thickened, about 5 minutes. Adjust seasoning if necessary.

Prepare the Beans
Soak the flageolet beans in cold water overnight. Drain and rinse.

Chicken Liver Mousse

Cook the Chicken Livers
Add chicken livers to the skillet and cook until browned but still pink inside, about 5-7 minutes. Add cognac and flambé if desired.

Blend the Mousse
Transfer the mixture to a blender, add the remaining butter and cream. Blend until smooth. Season with salt and black pepper. Chill in the refrigerator until set.
