Pasta Preparation

Cook the Spaghetti
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.

Cook the Pancetta
In a large skillet over medium heat, add the pancetta and cook until crispy, about 5-7 minutes. Remove from heat and set aside.

Prepare the Egg Mixture
In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.
Combining Ingredients

Combine Pasta and Pancetta
Once the spaghetti is cooked, reserve about 1 cup of pasta water, then drain the spaghetti. Immediately add the hot spaghetti to the skillet with the crispy pancetta.

Add Egg Mixture
Quickly pour the egg mixture over the hot pasta while tossing continuously to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
Serving

Garnish and Serve
Serve the pasta carbonara immediately, garnished with chopped fresh parsley and extra Parmesan cheese if desired. Season with salt and additional black pepper to taste.
