Main Ingredient

Method

Preparation of Marinade

  1. 1

    Make the Marinade

In a medium bowl, whisk together olive oil, lemon juice, minced garlic, chopped dill, salt, and black pepper until well combined.

  2. 2

    Marinate Salmon

Place the salmon fillets in a shallow dish or a resealable plastic bag. Pour the marinade over the salmon, ensuring each fillet is evenly coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Cooking the Salmon

  1. 3

    Preheat the Grill

Preheat your grill to medium-high heat (about 375°F to 400°F).

  2. 4

    Grill the Salmon

Remove the salmon from the marinade and discard the marinade. Place the salmon fillets on the grill, skin side down. Grill for about 6-8 minutes per side, or until the salmon is cooked through and flakes easily with a fork.

Cooking the Vegetables

  1. 5

    Prepare the Vegetables

While the salmon is marinating, prepare the vegetables by tossing the zucchini, bell peppers, and asparagus in a bowl with olive oil, salt, and black pepper.

  2. 6

    Grill the Vegetables

Place the seasoned vegetables on the grill in a grill basket or directly on the grill grates. Grill for about 5-7 minutes, turning occasionally, until the vegetables are tender and slightly charred.

Serving

  1. 7

    Plate the Dish

Once the salmon and vegetables are cooked, remove them from the grill. Serve the grilled salmon alongside the seasonal vegetables on a plate. Garnish with additional fresh dill or lemon wedges if desired.
