Crust Preparation

Preheat the Oven
Preheat your oven to 325°F (160°C).

Mix the Crust Ingredients
In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture resembles wet sand.

Form the Crust
Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer.

Bake the Crust
Bake the crust in the preheated oven for 10 minutes. Remove and let it cool while you prepare the filling.
Filling Preparation

Prepare the Cream Cheese
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

Add Sugar and Mix
Gradually add the granulated sugar to the cream cheese and continue to beat until fully combined.

Incorporate the Sour Cream and Vanilla
Mix in the sour cream and vanilla extract until smooth.

Add the Eggs
Add the eggs one at a time, mixing on low speed after each addition until just combined. Avoid overmixing.

Pour the Filling into the Crust
Pour the cheesecake filling over the cooled crust in the springform pan.

Bake the Cheesecake
Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly.

Cool and Chill
Turn off the oven and let the cheesecake cool inside with the door ajar for 1 hour. Then refrigerate for at least 4 hours, preferably overnight.
