Preparing the Panna Cotta

Bloom the Gelatin
In a small bowl, combine the gelatin powder and water. Let it sit for about 5 minutes until it becomes gelatinous.

Heat the Cream Mixture
In a saucepan, combine the heavy cream, whole milk, granulated sugar, and vanilla extract. Heat the mixture over medium heat, stirring occasionally until the sugar dissolves and the mixture is hot but not boiling.

Incorporate Gelatin
Remove the saucepan from heat. Add the bloomed gelatin to the warm cream mixture and stir until completely dissolved.

Pour into Molds
Pour the panna cotta mixture into individual serving cups or molds. Cover with plastic wrap and refrigerate for at least 4 hours, or until set.
Preparing the Berry Topping

Prepare the Berries
In a medium bowl, combine the mixed fresh berries, granulated sugar, and lemon juice. Gently toss to coat the berries with the sugar and juice.

Let the Mixture Rest
Allow the berry mixture to sit for about 15 minutes to release their juices.

Top the Panna Cotta
Once the panna cotta has set, remove it from the fridge. Spoon the berry mixture on top of each panna cotta cup just before serving.
