Main Ingredients
Method
Preparation
- 1
Prepare the Chicken
Preheat your oven to 375°F (190°C). Take the chicken breasts and place them between two sheets of plastic wrap. Use a meat mallet to pound them to an even thickness of about 1/2 inch.
- 2
Season the Chicken
Sprinkle both sides of the chicken breasts with salt and black pepper.
Breading Process
- 3
Set Up Breading Station
In three separate shallow dishes, place the flour in the first dish, beat the eggs in the second dish, and put the breadcrumbs in the third dish.
- 4
Bread the Chicken
Dredge each chicken breast in the flour, shaking off any excess. Next, dip it into the beaten eggs, allowing any excess egg to drip off. Finally, coat the chicken in breadcrumbs, pressing firmly to adhere.
Cooking the Chicken
- 5
Heat the Oil
In a large skillet, heat the olive oil over medium heat.
- 6
Fry the Chicken
Once the oil is hot, add the breaded chicken breasts to the skillet. Cook for about 4-5 minutes on each side until golden brown and cooked through. Transfer to a paper towel-lined plate to drain excess oil.
Assembly and Baking
- 7
Prepare for Baking
In a baking dish, spread a thin layer of marinara sauce on the bottom. Place the fried chicken breasts on top of the sauce.
- 8
Add Sauce and Cheese
Spoon additional marinara sauce over each chicken breast, then sprinkle mozzarella and Parmesan cheese on top.
- 9
Bake
Transfer the baking dish to the preheated oven and bake for about 20 minutes, or until the cheese is melted and bubbly.
Garnishing
- 10
Garnish and Serve
Remove from the oven, optionally garnish with fresh basil, and serve hot with pasta or a side salad.
