Calamari

Method

Calamari Preparation

  1. 1

    Prepare the squid

In a bowl, rinse the cleaned squid rings under cold water and pat them dry with paper towels.

  2. 2

    Mix dry ingredients

In a separate bowl, combine the flour, cornstarch, salt, black pepper, and garlic powder. Mix well.

  3. 3

    Set up the breading station

In one bowl, place the beaten eggs. In another bowl, add the breadcrumb (if using).

  4. 4

    Bread the squid

Dip each squid ring first into the egg, letting the excess drip off, then coat with the flour mixture, and finally dip into the breadcrumbs if desired.

  5. 5

    Fry the squid

In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the breaded squid rings in batches, frying for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Marinara Sauce Preparation

  1. 6

    Sauté garlic

In a saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

  2. 7

    Add tomatoes and seasonings

Pour in the crushed tomatoes, oregano, salt, and black pepper. Stir well to combine.

  3. 8

    Simmer the sauce

Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally.

  4. 9

    Finish the sauce

Taste the sauce and adjust the seasoning if necessary. Once done, remove from heat and stir in fresh basil.
