Preparation of Ingredients

Make the Spicy Beef
In a skillet over medium heat, cook the ground beef until browned. Drain excess fat, then add chili powder, cumin, garlic powder, onion powder, salt, and pepper. Stir well and cook for another 5 minutes. Set aside.

Prepare the Queso
In a saucepan, combine cream cheese, shredded cheddar, and milk over low heat. Stir until melted and smooth. Add chopped jalapeños and garlic powder, mixing well. Remove from heat and set aside.

Make Pico de Gallo
In a bowl, combine diced tomatoes, onion, cilantro, lime juice, and salt. Mix well and set aside.

Cook Tater Tots
Bake tater tots according to package instructions until golden and crispy.
Assemble the Totcho Poutine

In a large serving dish, layer the baked tater tots, followed by the spicy beef mixture, cheese curds, and house-made queso. Pour beef gravy (or vegetarian gravy) over the top.
