    Braised Beef

    In a large pot, heat olive oil over medium heat. Season the beef chuck roast with salt and black pepper. Sear the beef on all sides until browned, about 3-4 minutes per side. Remove from pot and set aside.

    Sauté Vegetables

    In the same pot, add the chopped onions, minced garlic, and carrots. Sauté until the onions are translucent, about 5 minutes.

    Braise

    Return the beef to the pot. Add the Guinness stout, beef broth, and bring to a simmer. Cover and reduce heat to low, cooking for 2-3 hours until the beef is tender and easily shredded.

    Prepare Mashed Potatoes

    While the beef is braising, boil the diced potatoes in salted water until tender. Drain and mash with salt and pepper. Set aside.

    Make Dijon Malt Mayo

    In a small bowl, mix together Dijon mustard and malt vinegar. Set aside.

    Assemble Loaded Fries

    Once the beef is done, shred it and mix with some of the braising liquid. Layer fries on a platter, top with mashed potatoes, shredded mixed cheese, braised beef, cheese curds, and drizzle with Guinness BBQ sauce. Finish with Dijon malt mayo, pickled onions, and chopped chives.
