Prepare Kimchi Mayo
In a small bowl, mix the mayonnaise with the chopped kimchi. Set aside.

Cook Bacon
In a skillet over medium heat, cook the thick-cut bacon until crispy. Remove and drain on paper towels.

Form and Cook Patties
In a bowl, season the ground beef with salt and pepper. Form into two patties. Heat the same skillet over medium-high heat and cook the patties for about 4-5 minutes per side or until desired doneness. During the last minute of cooking, place a slice of cheddar cheese on each patty to melt.

Assemble the Burger
Spread kimchi mayo on the bottom half of the burger bun. Place the cooked beef patty with melted cheese on top, followed by two slices of bacon, pickles, a drizzle of Korean BBQ sauce, and a sprinkle of sesame seeds. Top with sliced green onions and place the other half of the bun on top.
