Fried Chicken

    Marinate Chicken

    In a large bowl, soak chicken thighs in buttermilk for at least 1 hour, or overnight for best results.

    Prepare Flour Mixture

    In another bowl, mix flour, paprika, salt, and black pepper.

    Fry Chicken

    Heat oil in a deep pan over medium-high heat. Remove chicken from buttermilk, coat in flour mixture, and fry until golden brown and cooked through, about 8-10 minutes per side. Drain on paper towels.

Hot Honey Sauce

    Make Hot Honey

    In a small saucepan, combine honey and red pepper flakes. Heat gently until warm, then remove from heat and set aside.

Hollandaise Sauce

    Prepare Hollandaise

    In a heatproof bowl, whisk together egg yolks and lemon juice. Place over a pot of simmering water (double boiler). Slowly whisk in melted butter until the sauce thickens. Season with a pinch of salt.

Eggs and Assembly

    Poach Eggs

    In a pot of simmering water, carefully crack the eggs and poach for about 3-4 minutes or until the whites are set but the yolks are still runny.

    Assemble the Dish

    On each plate, place a fried chicken thigh, top with arugula, a poached egg, drizzle with hot honey, and spoon hollandaise over. Serve with hash browns on the side.
