Preparation

    Cook Tater Tots

    Bake or fry tater tots according to package instructions until golden and crispy. Set aside.

    Prepare the Ground Beef

    In a skillet over medium heat, cook the ground beef until browned. Drain excess fat, then stir in taco seasoning. Add a splash of water if needed to combine. Remove from heat.

    Make the Queso

    In a saucepan, melt butter over medium heat. Add flour and cook for 1 minute. Gradually whisk in milk and beef broth, cooking until thickened. Stir in cream cheese and cheddar until melted and smooth.

    Prepare the Gravy

    In another saucepan, heat beef broth and add taco seasoning. Stir until combined and heated through.

Assembly

    Layer the Ingredients

    In a large serving dish or individual bowls, layer the crispy tater tots, followed by cheese curds, and then pour the queso over the top.

    Add Toppings

    Top with the seasoned ground beef, pico de gallo, shredded romaine, guacamole, and drizzle with chipotle crema and buffalo sauce.

    Finish and Serve
